Camelina Gold Banana Blueberry Nut Bread

  • 1 cup whole wheat pastry flour
  • 1 ½ cup unbleached white flour
  • ½ cup sugar
  • ¼ cup brown sugar
  • 3 ½ tsp baking powder
  • 1 tsp salt
  • 3 tbsp camelina oil
  • ¾ cup milk or milk substitute
  • 1 egg
  • 1 cup ripe bananas mashed
  • 1 cup blueberries
  • ½ cup chopped walnuts

Preheat oven to 3500 F.

Add all ingredients into a bowl, stir to incorporate but don’t over stir.

Grease 2 loaf pans, 8 ½ x 4 ½ x 2 ½ or 1 loaf pan, 9 x 5 x 3, or muffin tins.

Bake for 50-55 minutes if using loaf pans, 30 minutes if using muffin tins.
