Camelina Gold Pumpkin Bread


Ingredients (makes 3 loaves):

1 (15 oz.) pumpkin puree

4 eggs

1 cup Camelina Gold

2/3 cup water

3 cups organic cane sugar

1 ½ cups pastry flour, 2 cups white flour

2 teaspoons baking soda

1 ½ teaspoons salt

3 teaspoons ground cinnamon

1 ½ teaspoons ground nutmeg

¾ teaspoon ground cloves

¾ teaspoon ground ginger

  • Heat oven to 350 F
  • Grease and flour 3 small bread pans or one large loaf pan.
  • In large bowl blend pumpkin puree, eggs, oil, water and sugar until smooth.
  • In separate bowl whisk flour, baking soda, salt, cinnamon, nutmeg,cloves, and ginger.
  • Stir dry ingredients into pumpkin mixture until just blended.
  • Pour into prepared pans, and bake for 50 minutes or until a toothpick comes out clean.
